Basque Black Cherry Cake

“The Basque cake is called “etxeko biskotxa” in the Basque language. We produce a Basque bake based on the original recipe that you could find in just about any Basque household. Indeed, many pastry chefs have updated this cake recipe by adding a crème patissière filling, but the real recipe has a black cherry filling. We make this cake in its home region, in St Pée sur Nivelle with French cherries. We put a Basque cross on all our cakes to pay tribute to the region.”
