Castelnaudary Cassoulet with Duck Confit

“The cassoulet was created during the Hundred Years War, when the residents of Castelnaudary were under siege by the English. In order to muster their strength before one last battle, they combined all their remaining provisions into one large stew that proved so healthy and invigorating that they were able to chase the English all the way to the Channel! The cassoulet takes its name from the cassole, an earthenware pot in which it cooks for many hours.”
