Peel the carrots, then cut all the vegetables and the apple into small sticks (be sure to remove the core of the cucumber and apple).
Cut the trout slices into 4 strips, then arrange a mixture of fruits and vegetables on them and roll them up.
Peel the citrus fruit, remove the pith and preserve the juice. Cut the segments into small cubes. Mix together and add the olive oil and pepper.
Taste the rolls and season with the vinaigrette.
You can also allow the vegetables to marinate in the vinaigrette for one hour.
